Eat with Melody: Frico Cheese!

Hello hello! How have you been? As you can see I’ve just been stuffing my face as usual…..
So, ofc when I heard about Frico‘s cheese campaign, I jumped on it, not wanting to miss out on the chance to eat.

Being expert cheese makers since 1898, Frico creates a range of high quality Dutch cheeses, all which are made from the milk of Friesian cows (and goat!). I’ve personally never had the opportunity to taste Dutch cheese, so I was very excited when Frico sent over 5 different cheeses for me to taste hehe. Of course, I included Ash in my cheese tasting and we came up with a few different recipes to make the experience a whole lot more enjoyable!

With the huge range of cheeses available, there was NO way that Ash and I weren’t going to whip up some burgers! But before I get to that exciting part of the post, here are some other delicious concoctions I made with Frico cheese.

Reuben Sandwiches using Frico Maasdam Cheese

Since Maasdam is the Dutch interpretation of Swiss cheese, we thought Reubens would be a good idea to chuck them in, which was perfect as they were pretty delicious melted over some corned beef brisket. We made these in a hurry (as we were late to something woops), and we were finished in about 10-15 minutes. So definitely recommend giving this is a shot if you’re after a quick and delicious lunch/dinner.

To make, butter up some Dark Rye bread on the outside, then add in corned beef brisket, sauerkraut, russian dressing (or thousand island like us if you live in Aus and can’t find any) and Frico Maasdam cheese. Stack it up and grill in your sandwich press until ready. Easy! (NB: In the picture above, the cheese slices are cut a bit too thick, so if you’re going to give this a shot, we recommend doing it thinner so they melt more)

Baked Pastries using Frico Chevrette Cheese

This is mild Chevrette cheese, which is in Frico’s premium line of goat cheeses. Now, don’t get me wrong – I absolutely love cheese, but I really just can’t stomach goat cheese ….in fact, I can’t stomach goat anything to be honest lol! THANKFULLY, Ash ain’t so picky so he enjoyed these Chevrette filled pastries by himself hehe.

To make, cut some puff pastry in to squares. Then fill with diced bacon, spinach, seasoning and Frico Chevrette cheese. Fold pastry over in to triangles, then give it a good egg wash! Bake in the oven at 180°c for 25 minutes or until golden.

Chicken Quesadillas using Frico Dutched Spiced Gouda Cheese

Frico’s dutch spiced gouda was probably one of my favourite cheeses, and thus this meal is easily one of my favourites and I will definitely be making it again (already had it for lunch and dinner the following day lol). The gouda is cleverly infused with aromatic cumin, and thus gives a unique spicy taste. I saw a recipe that paired cumin, chicken and gouda, so I was like HEY, I have two of those ingredients in ONE lol. Anyway..

Spread some sour cream on half of the wrap, then add in some cos baby lettuce, shredded spiced* chicken fillet, chopped tomatoes, salsa sauce (I used a bottle of Old El Paso), and Frico’s Dutch Spiced Gouda. Fold it over, and chuck it in the sandwich press until the wrap is crunchy. Serve hot!

*I seasoned the chicken fillet with corn flour, paprika, chilli powder, oregano, garlic powder and black pepper. 

Beatbox-inspired Burgers using Frico Gouda Cheese

Now, I must say that these are Beatbox’s Raph-inspired burgers because of a few things. Firstly, Raph doesn’t add bacon but we lovee our bacon so we decided to add that in anyway. He also doesn’t garnish with pickles, but pickles are awesome so whatever! And lastly, we screwed up making Raph’s stereo sauce due to a lack of mechanical whisk and lack of man power to manually whisk lol. Alas, since Frico did supply us with Gouda, and Beatbox burgers use Gouda, we decided to made our own interpretation of the Raph burger anyway.

Before assembly, get your bacon crispy and melt a slice of Frico’s Gouda cheese on your beef patty while grilling it. Starting with your bun, lather some burger sauce*, beef, cheese, bacon (optional), onion, tomato, lettuce, then ending with your top bun. Optional: Serve with healthy-ish fruity drinks that have 50% fruit juice cos this burg has SALAD in it and is therefore considered healthy in our books lol!

*Due to my legal binding obligations to Ash as a girlfriend, I cannot reveal the ingredients to his secret burger sauce.

Very Cheesyburgers and Loaded Cheese Fries using Frico Smoked Processed Cheese

So out of the pack we received, we were most excited to try the Smoked Processed Cheese, which yes, has been smoked in the traditional way (unlike other smoked cheeses we’ve tried)! Reminiscent of Ziggy and Mr Burger, we attempted to whip up some cheese sauce burgers and, my favourite trucker fries! As this meal was a lot more unhealthy than the previous one, we accompanied it with some good ol’ Dr Peppies.

Starting with the bun, chuck in your beef patty, bacon, onions, pickle, cheese sauce*, and finish with the top bun.

*Created by melting down some grated smoked processed cheese with corn flour and evaporated milk. Frustratingly, our cheese sauce was a little clumpy due to our inattention to the melting process, and a potentially insufficient amount of evapo milk (read: very insufficient).

To make these delicious and unhealthy loaded fries, cook your fries until golden and crispy. Season them before drowning them in the same cheese sauce as above, burger sauce and delicious diced bacon.

Verdict? I’m definitely gonna try make these loaded fries again… with more evapo milk haha.
